Ronan Cariou and La Ferme de l'Odet: an alliance born of a passion shared for the sea and taste

Today we're honouring oyster farmer Ronan Cariou, who supplies us with the oysters you'll find on our menu all year round.
Ronan Cariou has been passionately cultivating oysters and shellfish near the Îles-Tudy for over 30 years. His adventure began in the early 80s. At just 20 years old, he started his business at the cale des Américans on the Île-Tudy. In 2015, he moved his business to Le Haffond in Combrit, where he continues to work with the same high standards of quality.

A trust between producers and restaurateurs, to offer you the very best

On his farm, Ronan grows around 300 tonnes of oysters every year. In particular, he runs a 20-hectare oyster farm, where the shellfish grow in ideal conditions.

Growing oysters takes time and patience: it takes between 18 and 30 months for oysters to reach maturity.

They thrive in water that is particularly rich in phytoplankton, giving them tasty flesh.

Ronan Cariou produces several varieties of shellfish directly from his own fields: oysters, clams and cockles. His speciality is the Îles-Tudy oyster, as well as flat oysters.

Ronan is also the uncle of our chef Romain!
